The master of Suzume Shokudou hails from Nagano prefecture and serves ramen in the style of his hometown – mild but satisfying niboshi shoyu chuka soba. The shop opened its first Tokyo branch in 2013 and has gained a solid following. The noodles have a smooth texture and a good bounce. Each bowl comes with a slice of buta chashu and tori chashu. The buta chashu is seared lightly with a blast of the blowtorch. The egg has an orange, gooey center – marvelous. The small piece of fresh yuzu rind placed in the bowl is also a nice touch. If you're especially hungry, order the outstanding buta meshi (pork rice bowl) as a side – soft cubes of fatty pork that melt and ooze in your mouth. Suzume is one of the top shops in the vicinity of Tokyo Sky Tree, the world's second-tallest manmade structure. An attractive option for visitors to Tokyo.
