Kagari opened in 2013 and was quickly touted as one of the rookie shops of the year. A small, counter-only shop located down a narrow alleyway in Ginza, Kagari has a stylish Tokyo-modern interior that feels perfectly at home in its upscale hood.
Several dishes come recommended here. First and foremost is the tori-paitan, which is creamy white and probably one of the top-ten best of its kind in Tokyo. There's also a very nice niboshi shoyu – cloudy and full of punchy niboshi flavor – as well as a tsuke-soba. Kagari also offers some uncommon but impactful seasonal toppings, such as baby corn, Brussels sprouts, lotus root and fresh bamboo shoots. The bowls are executed with precision and care. The shop is quite popular and draws a line daily.
