Style: Tsubame-Sanjō Style
Bowl to Crush: Chuka Soba | 中華そば
This is the first Tokyo outpost of the popular Ramen Jun chain in the Tsubame Sanjou area of Niigata Prefecture. Jun serves classic Tsubame Sanjo-style ramen: niboshi shoyu soup, thick noodles, pork back fat, diced onions and iwa nori (rock seaweed).
Our recommended bowl is the standard chuka soba, but seaweed lovers should go for the isa nori ramen, which comes blanketed in a dark green layer of dried iwa nori. The noodles are a little curly, which goes well with the slightly oily soup. When you order your bowl you’ll be asked to specify your desired level of pork back fat. Jun offers five levels of fat. To keep it simple, for light back fat say, 'sukuname'; regular is 'futsu'; and for heavy back fat say, 'oni abura.'
Tsubame Sanjo ramen shops are abundant in Niigata Prefecture, but in Tokyo they are relatively rare. Jun is one of our favorite Tsubame Sanjo-style shops in the city – usually you would have to do some traveling to track down a bowl quite this authentic. Jun has a second Tokyo branch in Kameido, but we prefer this one. The shop is open until at least midnight every day of the year – a nice late-night option for those in the area.
