Shono-san, the creative talent behind this shop, is one of the most versatile ramen masters working in Tokyo today. He's now running numerous shops across the city and each is unique. At some of his outlets he offers limited menus that change monthly. Nichome Tsukemen Gachi was the second shop he launched, back in 2011.
Tsukemen Gachi serves tori-paitan ramen and tsukemen. Tori-paitan is a thick, creamy – almost milky – soup made from boiling down different chicken parts, including feet and crowns. Shono-san's tori-paitan is especially rich. Both the ramen and tsukemen here are excellent, but if you're on the fence, go with the tsukemen, which comes with a fresh lemon wedge. Get the karaage topping too. Karaage (fried chicken) is by no means a common ramen side dish, but Shono-san makes it click. The noodles are house-made. This bowl is hearty and satisfying in the belly. You certainly will not leave hungry. Beast approved.
